Hi,
I followed Hotbake's lovely recipe with my own process and I also increased some of the amounts to get a larger loaf (in the future I'll probably make the loaf even bigger)
-20g sugar, 1/8 tsp salt, black pepper
3. Autolyse the flour and chai concentrate for about 3 hours
5. Preshape, wait 20 minutes and did final shaping and put in fridge overnight (7 hours)

Would you mind sharing the size and brand of the banneton you're using? I need to invest on a different one as the only one I own is too big for my family of 2 and has a wide flat bottom, whatever I put in it got squished flat on the top...

I must admit I don't have a banneton. I live in a NYC apartment so I am very reluctant to purchase anything that isn't multi-functional. I've just been using 9" diameter bowls from IKEA. I've been debating getting a banneton, but the bowls seem to be working fine for now.
